In natural pistachio groves, the planting density varies from 50 to 500 plants per hectare, grown with a shape called “stump”, very similar to the polycaule pot, while in artificial ones, square layouts of 6-10 x 6-10 m are used with investments of 100-280 plants per hectare, grown in a more or less open pot and scaffolded at 80-100 cm. Pruning operations are limited as, especially the large branches, heal very slowly. During the production phase, annual or multi-annual interventions are carried out to eliminate decayed, dry and diseased branches. In some cases, green pruning interventions are also implemented, such as chequering and suckering (in the terebinth). To contain the development of weeds and limit evaporation, some surface processing or chemical weeding can be carried out.
The fruit is generally harvested in September, by hand and, sometimes, with the help of tarpaulins or nets. This operation, which was once performed in 2-3 times, is now generally carried out in a single solution.
After harvesting, the fruits must be deprived of the husk and placed to dry in the sun for a few days. The production of pistachios is quite variable (on average from 7 to 10 quintals per hectare of nuts.
